My #1 EASY Shortcut to Cut Dinner Prep Time In Half

I love eating healthy, but it also has to be EASY.  I refuse to spend hours in the kitchen prepping and cooking everything from scratch.  Eating healthy doesn’t have to be time consuming.  It can, and should, be QUICK & EASY!

 

My #1 shortcut to cutting dinner prep time in half is to use pre-cut produce.  It comes pre-washed, cut, and ready to cook!  All you do is drizzle with olive oil and sprinkle with your favorite seasoning.  Bake on a cookie sheet, oven set at 420* degrees Fahrenheit, for 20-30 minutes. 

 

Check in the produce section of your grocery store to see what pre-prepped vegetables they offer.  Some of our go-to’s are:

  • Broccoli
  • Cauliflower
  • Zucchini
  • Brussel sprouts
  • Butternut squash
  • Onion
  • Green onion
  • Taco toppings
  • Burger toppings
  • Asparagus
  • Cauliflower rice
  • Vegetable medleys

 

A few other shortcuts we use often are:

~ Pico de gallo can be used in tacos & omelets

~ Mix pico de gallo with mashed avocado for a delicious dip

~ Mirepoix (container of diced carrots, celery, & onion) can be used in stir      fry & soups

~ Minced or pureed garlic instead of bulbs → used in everything

~ Pre-cooked & sliced beets (add some feta cheese crumbles…helloooo yumminess!) 

 

These pre-chopped/prepared produce are slightly more expensive than if you purchased them in whole form, but if it’s going to help you to eat healthy foods it’s well worth a couple extra bucks.

 

If you have the time and enjoy chopping and preparing, that’s awesome!  Pour your glass of wine and get in your groove.

 

But if your evenings are more hectic or you just plain don’t enjoy all that extra time in the kitchen, then buy the pre-chopped versions!

 

Personally, I love the pre-chopped versions.  It saves me so much time.  I literally dump them in a pan or skillet, add olive oil & seasoning, and put it in the oven to roast.  So.Freaking.Easy.

 

Bottom line, do whatever the hell makes you happy and healthy.  There is no right and wrong way to eat healthy.  Just different versions.  Some people really enjoy chopping.  I am just not one of those people.  Do what works for you and what will make dinnertime enjoyable!
